Brit's Kale Salad
So, eating healthy kinda stinks, right? I always feel hungry and will literally raid my pantry for any junk that I can find. I’m usually unsuccessful…but my goal this spring and summer is to really do well with eating and working out. I have a big event this fall and I want to look good and that means, I can’t be getting all the fattening coffees and pizzas that I always crave. SO, with that said, I had thee BEST kale salad the a couple of weeks ago, made by one of my bests, Brit. This girl is a BEAST when it comes to cooking and I swear, she kills it in the salad game. I don’t even like salad and she gave me this kale salad recipe that is to.die.for! I’m going to share it with you all in hopes that you’ll love it as much as me! I’ve had the recipe for a little over a week and I’ve made it at least eight times. It is a bit labor intensive, but follow the steps and I promise you’ll love it! If you make it, let us know! Brit’s Kale Salad
- bunch of organic kale unchopped (chop up very small, even the stems!)
- 2 whole lemon or orange—juiced
- olive oil
- salt
- pepper
- Apple cider vinegar
- Dijon Mustard
- Nutritional Yeast
- White Cheddar
- Organic Chickpeas or garbanzo beans
- Tahini

Once you have the kale all chopped up, smother it in olive oil, salt, and pepper. You will be able to tell when it’s all coated and getting softer.
First, make DRESSING:
In a separate bowl, juice a whole lemon or whole orange. Measure out the juice and use the same amount, equal part of olive oil. Add in 1 tablespoon of apple cider vinegar, 1/2 tablespoon of dijon mustard. Then add salt and pepper to taste. Adjust as wanted. Toss kale in the dressing, but got easy because you may not want to use it all. (I just just a little bit to start)
Lastly, make HUMMUS:
Take 1 can organic chickpeas or garbanzo beans and do not drain. Add in 1/3 cup of Tahini. Add in juice of one lemon. Add Salt. Add 1 clove of garlic. Blend in high food processor and adjust to taste.
After your kale has been lightly tossed in dressing, add your hummus and toss kale in that as well! Sprinkle with nutritional yeast and white cheddar for extra phenomenal taste! ENJOY!
